Wilmer Llatas Cardozo has been producing coffee for 18 years in the Santa Cruz community. For most of his life, Wilmer has been working the land and involved with coffee production. With the help of families, day laborers, and the support from the cooperative, harvesting is made possible for him. He's focused on raising the quality of his crop and aims to produce an award winning coffee.
Wilmer works with Santuario, a local cooperative, that is committed to providing real value to people's lives through honesty, transparency, education and growth, as well as an emphasis on quality. Their mission is to help smallholder producers get the best possible prices for coffee through quality improvements. They're dedicated to long-term sustainability and long-term profitability for these farms.
As we taste Wilmer's coffee, we notice a nice sweetness that comes through vividly which reminds us of candied plum. It's accompanied with pleasant acidity that is reminiscent of a grapefruit. One of the more prominent features of this cup is the velvety texture. This coffee is bright, complex, and has been a pleasure to enjoy as drip coffee or made as a pour over.
