In 2008, Jhonatan and his brother Johan began working with specialty coffee on their family farm. With the help of their parents' knowledge and pursuing further education, they've been able to push the quality of their family's farm.
This coffee undergoes an interesting process. It gets depulped, fermented in sealed containers for 48hrs, and then goes through thermal shock which both quickly exposes the beans and quickly halts the fermentation process. The coffee then gets dried in a sealed stainless steel dehumidifier to a precise 11% moisture content.
The result? A very clean cup with a fruit and berry forward flavor profile that instantly made us fall in love with this coffee on the cupping table.
