Ildefonso lives in Bruselas, southern Huila and is part of the Los Guácharos group. The group is a collective of small producers who are innovative and focused on quality. We've purchased coffees from a few of these producers, and we're oftentimes impressed with the work this collective can produce.
This is the second harvest we're featuring from Ildefonso Córdoba. Just like our last pick from him, we love his fruit and berry forward flavor profile all while being clean in the cup. Our first experience with this bourbon aji reminded us of a pleasant Kenyan. It's got dark berries, a tropical flavor profile, and with a tart aftertaste.
