Miller Ñañez owns a farm he inherited from his parents in Huila. His pink bourbon trees are about five years old and recently had enough yield to sell. Ñañez, after picking ripe cherries, leaves the coffee still in the cherry in sealed bags for an initial fermentation. Later after depulping, the seeds goes back into more fermentation in sealed bags before a final wash and drying period.
This lovely pink bourbon is giving us dried fruit, lemonade, caramel apple, and brown sugar.
